Roasted honey-almonds
To prepare 2 cups of roasted almonds you will need:
- 2 tbs (0.6 oz, 17 g) unsalted light butter
- 1/4 cup (1.2 oz, 34 g) honey
- 1/4 cup crushed cinnamon biscuits
- 1 tsp (5 ml) vanilla
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 2 cups whole almonds
Melt the butter over a low heat. Add honey, vanilla, cinnamon, nutmeg, almonds, and half of the crushed biscuits. Cover a baking tray with a wax paper and spread the mixture over. Bake at 1700C (3500F) for 10 min. Remove from oven. In a medium bowl mix the baked almonds with the remaining crushed cinnamon biscuits. Use as a pancake, honey-toast or muffin topping. In a hot summer day sprinkle over a vanilla ice cream scoop to give it a grate taste.
