QUICK DINNER FOR TWO (about 20 min prep time)
This dish will take no more than 20-25 minutes of your time.
To prepare a meal for two will need the following ingredients
2 pieces skinless boneless chicken breast
1 medium onion
1 sweet red pepper
1 medium size carrot
1 tbs sunflower oil
1tbs soya sauce
2 tbs corn starch
1 1/2 cups chicken broth
Before you start cooking prepare the ingredients
1) If desired cut the chicken breasts in thin stripes, about 2-3 cm (1 inch)
2) Slice the onion on thin rings
3) Slice the red pepper
4) Slice the carrot on rings
5) Mix together chicken stripes and soya sauce
6) Whisk together chicken broth and corn starch
In a non-stick skillet cook the chicken until half done or until the meat turns white.
Add onion rings, sliced pepper and carrots. Cook for about 5 min until veggies start to soften. Add the chicken broth and corn starch mixture to the skillet and continue cooking over medium heat until chicken is ready. Cook stirring constantly. Small soft bubbles will appear in 2-3 minutes.
Serve aside rice and mashed potatoes. Decorate with some fresh veggies by your choice to give the dish a nice design.
