To prepare 12 average size muffins you will need the following ingredients:
4/3 cups sour cream or full cream yoghurt
1 cup cereal (your choice)
1/2 cup honey
1 cup milk
1/2 cup unsalted butter or margarine
2 cups all purpose flour
1 tsp baking powder
1 tsp baking(bicarbonate) soda
3/2 caps dried fruits
Mix all ingredients following the steps below:
1. Combine cereal with flour and baking powder. Add melted butter and mix.
2. Beat the egg white separately and add milk to the mixture. Beat egg yolk separately and add to the egg white and milk. Add honey.
3. Mix together yogurt and baking soda until soft bubbles appear.
4. Pour 2) and 3) into 1) and add the fruits. Mix all.
Spray 12 muffin cups with butter or margarine. Fill in about 2/3 of each. Bake for 25-30 min on 355 degrees F (180 degrees C).
Always preheat oven to the desired temperature before start baking.
You can omit the smell of bicarbonate soda if you add a pinch of salt or drops of lemon juice.
